This is an easy, delicious pie! I usually make it as a Thanksgiving dessert (in Southern California), because the lightness is much appreciated after a big heavy meal. The Saltine crust is both what makes it taste so special and what makes it so simple (vs. making a traditional pie crust).
A true summer dessert. It's so easy and so delicious. Don't use Meyer lemons - you want the tartness to shine through. I usually make double the filling, and I use Ritz crackers for the crust.
